Sunflower  (Helianthus annuus L.)  is a cultivated plant. In addition to producing vegetable oil, it is a very important fodder plant. The plant grows to a height of 1.5-2.5 m, has saucer-shaped, nested flowers, and yellow flowers. The seed yield is significantly improved due to the pollination work of bees.

When to collect:

It is a long-flowering plant, blooming in the second half of summer, in August.

Appearance of honey:

Yellow honey with a strong, characteristic aroma.

It crystallizes very easily to a hard state, and when crystallized, it becomes orange in color. The crystallization can be layered, when layers that are partly liquid and partly crystalline, or even of several shades, separate within it.

Crystallization of honey is a natural phenomenon, it does not affect its quality, it is not a quality defect! The fluidity of honey can be restored in a short time by placing it in a sunny, warm place, on a radiator or in warm water. Be careful not to caramelize it!

Uses of honey:

Due to its strong flavor and crystallization, it is primarily used in baking and to flavor tea.

It goes very well with dairy products: yogurt, cottage cheese, cheeses, cream, butter, ricotta, mascarpone. (Whether it's appetizers, snacks, cakes.)

For example: figs with cottage cheese / cream cheese / ricotta and sunflower honey, wrapped in Parma ham.
