Based on the above, it can be seen that there is no such thing as pure varietal honey, only varietal characteristics. This is why it can happen that, for example, acacia honey, which theoretically does not crystallize, crystallizes. This is not the honey's fault, it is just that the bees found some rapeseed, for example, which they brought into the hive while the acacia was blooming.

So, mixed flower honey is any honey that contains honey from multiple flower types. Thus, the plant from which it is collected and the honey itself can be very diverse.

The most important tree species: Willows, Fruit Trees, Maple, Acacia, Chestnut, Linden, arable crops: Rapeseed, Mustard, Phacelia, Lucerne, Sunflower, weeds: Wild Garlic, Dogwood, Milk Thistle, Goldenrod, and the various honeydews: Pines, Linden, Chestnut.

When to collect:

All year round, from early spring to late autumn. Usually honeys from the period before and after the production of varietal honeys.

Appearance of honey:

It is very diverse! From light yellowish to yellowish-brown to dark brown, almost black. Its taste, aroma, and flavor are also diverse, but typically rich in strong, dynamic flavors. In some cases, bitter flavors and, for some, unpleasant odors can also occur.

It usually crystallizes easily.

Crystallization of honey is a natural phenomenon, it does not affect its quality, it is not a quality defect! The fluidity of honey can be restored in a short time by placing it in a sunny, warm place, on a radiator or in warm water. Be careful not to caramelize it!

Honey composition :

The value of mixed flower honey is given by its diversity and variety. As well as its higher mineral and flavonoid content. (The darker the honey, the richer it is in minerals and flavonoids.) In addition to the diversity of sugars, this "type" of honey also contains the vitamins and trace elements found in most honeys.
